毎日、おやつ何にしようか、考えるのが楽しい。時間があるとき何か面白くて手間かかるものを作りたい気持ちはある分、ほとんど時間がないので早くて簡単にできるものがベスト。
今回はたまたま冷蔵庫内にベークドさつま芋発見。いつ焼いたのだろう、ああ、記憶が!笑 さつま芋は大ファンで、焼いたり炒めたりしてもおいしい。ハッシュドさつま芋も絶品。だが、今回はおやつ。

このレシピはネットで前見たレシピのリメイク。バターを使わない、砂糖少なめのほう。味には負けていないのに少し体に優しい。

早速作ろう。
ジンジャー入りさつま芋 プチ菓子
5個分
- 200g ベークドさつま芋
- 20g ココナッツオイル
- 大さじ2 牛乳 (ナッツミルクに変更可)
- 小さじ1 砂糖
- 小さじ1 ジンジャーペースト
- 1個 卵の黄身
- シナモン 適量
方法
- さつま芋前もってオーブンで焼いたり電子レンジで加熱したりしてから、ピューレ状態につぶす。
- そこへココナッツオイル、牛乳、砂糖とジンジャーペーストを加えてよく混ぜる。
- 生地を5等分に分けて、形をつけてアルミホイールが敷いたトレーに並べる。
- 上に黄身をハケで塗ってシナモンを振る。
- トースターで表面に焦げ目がつくまで焼く (私のトースターで10分かかった)
- 冷めたらお茶やミルクにどうぞ。
全部一気に食べたくなる、スパイシーでおいしい!そして、さつま芋が裏ごしなどされたら仕上がりがもっとふわっと。15分でできるおやつ、いいでしょ! 笑

There are days I am literally surviving through on a thought of what am I to make for a snack. Snacks, and self-made ones, cannot be underestimated especially when restricting calories or trying some new eating patterns (I am avoiding “diet” word on purpose as I hate it). When I have time to spend on some fancy snack prepping it is fabulous, but the reality is that usually I just have 10 or 15 minutes in between to fix something really fast. This time was that kind of time.
I baked sweet potato the other day, but it ended up uneaten and locked in tupperware. Baked sweet potato snack it will be! I did the recipe I saw somewhere in the internet, changing it to suit my eating habits. In the original recipe there was butter and more sugar, while I switched butter to coconut oil, and reduced sugar almost triple. As I was planning to give some to my kid, I didn’t change cow milk (I don’t give it to my kid but almond milk option sounded a bit risky for 1,5 yo), neither I did with sugar (I mean any sweetener is fine, but I wasn’t so sure again taking into account my still little kid going to eat it later).

Sweet Potato Treats with Ginger
makes 5 small treats
- 200g baked sweet potato puree
- 20g coconut oil
- 2 tbsp milk
- 1 tsp sugar
- 1 tsp ginger paste
- 1 egg yolk
- cinnamon
How to
- Cook sweet potato and crush it into puree. The smoother it is, the silkier will be the treat.
- Add melted coconut oil, milk, sugar and ginger paste into the sweet potato puree and mix well.
- Divide into 5 parts, make an oval formed cookies and lay it on aluminum foiled baking tray.
- Brush the egg yolk over and sprinkle with cinnamon powder.
- Bake in the toaster until having a good color and cinnamon completely melted. (Took me about 10 more minutes in my toaster)
- Best after being cooled. Good with any drink!
